Ingredients

  • 3 tbsp vegetable oil
  • 1/2 cauliflower (300g) cut into bite size florets
  • 2 medium potatoes (skinned and chucks)
  • 1/4 cup water (more are needed if not cooked through)
  • 3 tbsp Everyday milk powder (mix with 200ml water)

Curry Paste:

  • 1 red onion (finely diced)
  • 3 cloves garlic (finely chopped)
  • 1 tbsp grated ginger
  • 1 green chilli (sliced)
  • 1 tomato (diced)
  • 1 can (390g) chopped tomatoes
  • 1 1/2 tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp ground turmeric
  • 1 tsp chilli powder
  • 1/2 tsp garam masala
  • Juice from 2 limes
  • Salt and pepper to taste
  • Coriander for garnish

Directions

  1. Heat oil in a non-stick pan. Add in cumin seeds and potatoes. Fry till fragrant. Cook for 2-3 minutes on low heat.
  2. Add in cauliflower and stir fry until both potatoes and cauliflower turn slight golden brown. Dish out and remain oil in pan.
  3. Add in curry paste mixture and stir fry on low heat for 3-4 minutes till oil starts to bubble.
  4. Toss in potatoes and cauliflower. Add in water and bring to a slow simmer. Stirring constantly.
  5. Once the curry starts to thicken, check if potatoes are cooked through.
  6. Bring heat up and add in Everyday Milk then turn off the fire. Continue to stir till well combined.
  7. Dish and serve. Garnish with coriander.
