Ingredients

  • 1 Tbsp softened butter (for greasing pudding cups)
  • 1 Tbsp caster sugar
  • 1 Tbsp sifted cocoa powder
  • 160 high quality baking chocolate, cut into thin slices
  • 3 medium-size eggs (60 g each)
  • 1 egg yolk
  • ¼ tsp vanilla essence
  • 70 g sugar
  • 40 g NESTUM® All Family Cereal Original
  • Fruits of your choice

Directions

  1. Generously brush the insides of 6 small heatproof ramekins, coffee cups or tumblers with softened butter. Combine the caster sugar and cocoa in a small bowl and dust the inside of the buttered cups with this mixture, gently tapping out any excess. Place prepared cups on a tray and chill in the refrigerator (for at least 10 minutes) or until required.
  2. Place chocolate and butter in a bowl and melt by placing bowl over a small pan of simmering water, stirring occasionally. Once chocolate melts, take bowl off the heat and stir until smooth.
  3. Beat whole eggs, egg yolk, vanilla and sugar together in a separate mixing bowl – until mixture looks slightly foamy, but do not over-beat. Stir in the warm chocolate and mix until well incorporated.
  4. Lastly, fold in the NESTUM® and pour batter into the prepared cups, filling cups about 4 – 5 cm deep.
  5. Test-bake one cup (while you keep the remaining cups) in the fridge. Place cup in a preheated (190 C) and bake 12 - 15 minutes (depending on cup size). Remove from oven, let it sit at room temperature for 10 minutes before you carefully ease the cake away from the sides of the cup with the tip of a small butter knife, being careful not to pierce any part of it. Turn out carefully onto a small dessert plate. After testing the first cake (sides should be firm and centre soft,) adjust baking time accordingly for the remaining cups.
  6. Serve warm lava cakes garnished with fruits of your choice and vanilla ice cream if wished
